Cheese has a secular tradition in Castilla y León that, with the help of modern technology, has attained high levels of elaboration, boasting a quality and variety well-known outside the country.

Considering the type of milk used (cow, sheep, goat and mixtures of these) and the different methods of elaboration, Castilla y León produces a wide variety of cheeses of different textures and flavours.

The quality is supported by one Denomination of Origin, Queso Zamorano (cheese); one Protected Geographical Indication, Queso de Valdeón (cheese); and two Guaranteed Brands, Queso de Arribes de Salamanca (cheese) and Queso Castellano (cheese).
